Prosciutto and melon is a very simple and quick antipasto dish and a staple in Italian cuisine, especially during the summer! Not many know it has been done for almost two thousand years. The combination of these two ingredients was ideated by a Greek doctor named Claudio Galeno, he thought that this dish had all four elements of nature: warmth, coldness, dryness and juiciness. He also was a firm believer that to be healthy one should eat everything in moderation and have a diet composed of these four elements.

This dish highlights how, in Italian cuisine, oftentimes dishes are made if fairly simple ingredients that create a perfect combination and create classic and timeless combinations.

In this case, we have only 2 ingredients: melon and prosciutto. To make it cut in slices the melon, remove the seed and then wrap it in thin slices of prosciutto (either di Parma or san Daniele) and you’re done!
