Discover Olive Oil & Balsamic Vinegar

Olive oil is a food oil extracted from the olives, the fruits of the olive plant. The virgin oil type is derived from the mechanical squeezing of the olives.

Olives are traditionally harvested (in Italy from mid-October to late December) on nets, in some regions by cutting branches with flexible sticks, so as to cause the fruits to disappear, or in others, expecting full ripeness and therefore their fall Natural from the plant. A more modern technique involves the use of mechanical buffers that shake the branches and cause the fall of the olives on a ground-based grid that allows them to collect them more quickly and with less fatigue.

 

Balsamic Vinegar is a traditional condiment of Emilian cuisine, made with the cooked must of grapes which comes exclusively from the Italian provinces of Modena and Reggio Emilia.

The must is then fermented, acetified and then aged. It is characterized by a rich, glossy, deep brown color, and it has a complex flavour that balances the natural sweet and sour elements with a hint of wood from the barrels that it is stored in for a minimum of 12 years.
