A staple in the Italian summer is, of course, the amazing mozzarella. Eat it on its own, with vegetables or fried…You can never go wrong with it.
Mozzarella in carrozza seems to have been born at the beginning of the nineteenth century and, like many traditional Venetian dishes, it was a recovery solution. In Venice it is very popular in the bàcari but was devised in Naples as an alternative to using bread and leftover mozzarella.
To create this dish you’ll have to put together small delicious morsels, wrapped in a golden wrapping like potato croquettes and Ascolana olives and it’s immediately an aperitif!
But who said that to be appetizing these goodness must necessarily be dipped in boiling oil? We have thought about it and we want to challenge you, with our lighter variant of a timeless classic: baked mozzarella in carrozza. With its tasty soft filling enclosed in a casket of bread, it is an irresistible variant of its homonymous fried version!
The only difference: the cooking in the oven which makes it equally crunchy on the outside and with a pleasantly stringy heart inside. Heat the ovens and sharpen the knives, preparing this recipe will be child’s play!
Baked Mozzarella in Carrozza Recipe
For 9/12 muffins depending on the size you make.
- 200g of Mozzarella
- Salt
- 140 g of sliced bread
- 100 g of sliced ham
- 2 eggs
- Black pepper
- 50g of whole milk
- Breadcrumbs
Procedure
To prepare the baked mozzarella in carrozza. Start by cuting off the edges of 8 slices of bread, then dry the mozzarella and cut it into slices. It is important that the mozzarella is well dried so that it does not lose any liquid during the cooking phase. In a separate bowl, beat the eggs. Add as much as you want of salt and pepper. Take a slice of bread, lay the slices of mozzarella on top of it and add oe slie of ham. Then close it like a sandwich with another slice of bread. Pour the milk into a bowl and dip the whole bread sandwich. After that, pass it in the beaten eggs and finish the breading with the breadcrumbs. Make sure to carefully cover the whole surface and edges of the bread. Now it is possible to proceed with the cooking: place a pan with parchment paper and place the pieces that are going to be cooked; cook in a preheated oven at 200 ° for 15 minutes in static mode. When cooked, take the pan out of the oven and serve your mozzarella in carrozza!
