This recipe is perfect as a quick appetizer, simple but yet delicious and pretty healthy too. The broccoli cream will mix with the Grana Padano to create an amazing mix of flavours that will melt in your mouth! Also let’s not forget that this vegetable has a valuable reserve of vitamins and minerals: Broccoli is a good source of iron, potassium, calcium, selenium and magnesium, as well as vitamins A, C, E, K and a good range of B vitamins, including folic acid.
It’s the perfect guilty free appetizer for this warmer season!
Grana Padano PDO on Broccoli Cream Ingredients
- Grana Padano PDO
- 2 Eggs
- Breadcrumbs 4 tbsp
- 1 clove of garlic
- 400 g of Broccoli
- Extra Virgin Olive Oil
- Salt
- Pepper
Procedure
Cut the Grana Padano DOP into little cubes and obtain 16 morsels, then wash the broccoli thoroughly and cut it into small pieces. Sauté it in a pan with a clove of unpeeled garlic add a tablespoon of extra virgin olive oil and a sprinkling of salt and pepper.
Cook the broccoli in a pan for about 15 minutes, if necessary add half a glass of water to prevent it from drying out too much and at the end of cooking then blend it with an immersion blender to obtain a cream. Beat the eggs in a bowl and immerse the bites of Grana Padano PDO first in the eggs and then in the breadcrumbs. Once the cheese is covered, fry it in plenty of oil for a few minutes.
Now it’s time to prepare the aperitif by serving the morsels of cheese and placed on the broccoli cream.
